Napa Lettuce

Providing a flavor profile that’s sweet, crisp, and refreshing, napa lettuce also packs a punch nutritionally. It’s rich in Vitamin B9 (Folate), Copper, Iron, and Manganese. Belonging to the Brassica family, it has a natural cooling effect on the body and can reduce swelling and inflammation. Traditionally used in vegetable stocks and pickled dishes. 

Taiwan Cabbage

Not to be confused with any old cabbage, Taiwan cabbage is an excellent source of Vitamin C, as well as Vitamin B6, Calcium, Iron, and Magnesium. As a member of the Brassica family, it has a perfectly sweet and crunchy texture. If you’re looking to feed your good gut bugs – look no further. Taiwan cabbage is incredibly beneficial for the gut microbiome. 

Tofu

Our tofu is housemade and derived from soybeans. In our process, the soy milk is curdled using gypsum and formed into blocks. Tofu is incredibly healthful and includes high levels of protein, calcium, and antioxidants, as well as a myriad of other vitamins and minerals such as Iron, Potassium, Manganese, Selenium, Phosphorus, Magnesium, Copper, Zinc, and Vitamin B. Tofu is great for hormone and heart health, as well as reducing inflammation. 

Chia Seeds

Historically eaten by the Aztec and Mayan civilizations for medicinal properties, chia seeds are rich in fiber, vitamins, minerals, and powerful antioxidants. Chia is the edible seed of Salvia Hispanica, a flowering plant in the mint family. Chia seeds contain Quercetin, an antioxidant that can reduce the risk of various health conditions. It is an incredible source of Omega-3 fatty acids and caffeic acid to reduce inflammation. 

Furu

Furu is a fermented bean curd made by fermenting tofu. Including Fury in recipes can increase mineral and protein absorption in the body and helps aid digestion. Since it’s fermented, it’s an amazing probiotic and organic acid. It contains high levels of B12, which is key for brain and nerve functioning. The large quantities of glutamates produce a strong Umami taste, which provides a savory, complex, and delicious flavor. 

Mung Bean Vermicelli

A transparent noodle made using mung bean starch powder, mung bean vermicelli is a fantastic source of complex carbohydrates and fiber. They are a good source of protein and other essential vitamins and minerals. They’re easy to digest, making them nutritious for any diet. 

Shiitake Mushrooms

Native to East Asia, Shiitake is a meaty and woodsy edible mushroom with an Umami flavor. They are naturally high in Vitamin D and many chemical compounds that protect against DNA damage, specifically chromosome damage caused by anticancer treatments. Shiitake mushrooms are high in Omega-6 linoleic acid, which has bone-building benefits and provides for improved digestion in supporting and maintaining weight loss. Also known to reduce cholesterol levels and support a happy, healthy heart. 

Sesame Oil

Often referred to as the queen of seed oils, sesame oil is a fragrant cold-pressed oil made from sesame seeds. Sesame oil is high in antioxidants and anti-inflammatory properties. It is comprised of 82% unsaturated fatty acids, rich in Omega-6 fatty acids, which help prevent disease. Sesame oil is a warming and healing ingredient used in our traditional recipes. 

Soy Sauce

Produced by fermenting soybeans and wheat, soy sauce is high in amino acids, influencing its high glutamic acid content and creating a unique Umami flavor. Soy sauce is a strong source of antioxidants and can provide prebiotic effects on certain types of healthy bacteria in the gut. 

Yeast Extract

Helpful in intensifying the sweetness of vegetables and savory notes, yeast extract is high in Vitamin B and glutamates, which increases Umami flavor. Including it in our recipes allows foods to reduce fat, sugars, and salts, as it naturally increases smoothness, richness, and increases flavor perceptions. 

Green Cardamom

This spice brightens dishes with a lemony aromatic glow. Belonging to the Ginger family, it contains antibacterial properties which can help with foodborne illnesses and infections. Green cardamom can support liver and heart functions, reduce blood pressure, increase antioxidant status, and reduce swelling and inflammation in the body. 

Cloves

High in antioxidants, cloves are dried flower buds from the clove tree. They come with deep caramel flavors that balance the sweetness of our dishes with a slight bitter astringency. Cloves have antibacterial qualities that are known to help with oral hygiene, insulin resistance, and glucose tolerance. 

Sea Salt

We use sea salt that is minimally processed and provides a high mineral content and added flavor profile for our recipes. 

Eggplant

Also referred to as aubergine, eggplant is a part of the fruit family and is high in fiber. Anthocyanin in eggplants is the main antioxidant agent that prevents many forms of chronic disease. Eggplant contains minerals such as manganese, folate, potassium, and vitamins K and C. 

Bell Peppers

Bell peppers, sometimes referred to as sweet peppers, are extremely high in Vitamin C and antioxidants. In fact, only a half cup of raw peppers provides over 100% of the recommended daily value. Foods high in Vitamin C help boost Collagen and increase protein metabolism and iron absorption. Bell peppers also contain high levels of vitamins A, E, B6, and Folate. They contain many antioxidant agents, such as quercetin, luteolin, capsaicinoids, beta carotene, and lycopene – which help with cell damage and prevent cancer, diabetes, and cardiovascular disease. 

Zucchini 

Zucchini is a member of the Crucrbitaceae family. Often referred to as summer squash, it is rich in micronutrients and packed with trace minerals. It provides a unique combination of soluble and insoluble fiber that aids gut health by feeding healthy bacteria and moving along digestion. 

Fennel Seeds

A seed from the herbaceous plant of the same name, fennel has a sharp flavor with licorice-like undertones. Fennel seeds contain up to 87 volatile compounds that have powerful anti-inflammatory effects. Notable compounds include polyphenol antioxidants, rosmarinic acid, chlorogenic acid, quercetin, and apigenin – some of which are known to provide antimicrobial and antiviral properties. 

Coriander Seeds

Seeds from the cilantro plant are known to speed up healthy digestion and are known to decrease abdominal pain, bloating, and overall gut discomfort. Coriander seeds contain antimicrobial agents that prevent foodborne illnesses. 

Kale

This dark, leafy superfood is packed full of vitamins and minerals. Kale contains vitamins A and C, Folate, alpha-linolenic acid – an Omega-3 fatty acid- and minerals such as phosphorus, potassium, calcium, and zinc. The health benefits of kale have been linked with weight loss, decreased rates of cancer, and lower cholesterol. 

Trumpet Mushrooms

Popular for their savory flavor and meaty texture, trumpet mushrooms are a fantastic addition to some of our favorite  recipes. Not only are they delicious, but they also come with various health benefits. Trumpet mushrooms contain a number of antioxidants that help the body fight free radicals and oxidative stress. Additionally, these powerful mushrooms contain selenium, which protects against cell damage. Trumpet mushrooms have been shown to help with weight loss, support bone health, lower cholesterol, and reduce the risk of certain cancers.  

Star Anise

A source made from the fruit of a Chinese evergreen tree, star anise contains a variety of flavonoids and polyphenols that are shown to have various health benefits. Several compounds contribute to this powerful spice's antioxidant, anti-inflammatory, and antimicrobial properties. 

Unbleached White Wheat Flour

Some chemical compounds in bleached flour have been linked to adverse effects in laboratory studies. While more research is needed, unbleached flour is richer in several key nutrients. Specifically, unbleached and unrefined flour includes more fiber, vitamin E, manganese, copper, and various antioxidants. 

Glutinous Rice Flour

Rice is naturally a fiber-rich food. Glutinous rice flour includes vitamins B and D, potassium, and phosphorus. These nutrients are key for bone density, immunity, nerve functioning, and a healthy metabolism. Glutinous rice flour is a complex carbohydrate that can help control hunger and blood sugar.

Ceylon Cinnamon

The vitamins and minerals in Ceylon cinnamon can provide powerful health benefits. Beta-carotene is the reason for the rich brown color. This superfood spice contains antioxidants, which can decrease your risk of cancer, heart disease, and diabetes. It also contains manganese, which protects the body from free radicals. Ceylon cinnamon has been linked with reducing inflammation and cholesterol levels and improving insulin response.

Cumin

This spice hails from a leafy plant that produces the cumin seed. Cumin contains antioxidants, anticancer properties, helps to control blood sugar, fights bacteria, and has an anti-inflammatory effect. Cumin has been known to help lower cholesterol and aid in weight loss. Cumin is so effective at treating cramps, digestive spasms, nausea, and bloating that researchers are hopeful it may be an effective way to treat IBS in the future.
